I was on a very short but thorough hunt to find a perfect Vanilla cake. But after 2 failed attempts, I was about to quit when I saw this recipe. I adapted this recipe from Bakerella. I did add a few things to the cake though. But, she is a genius! This cake was perfectly moist with a delicious flavor to match. She also came up with the Sugar Spray and that idea was the best idea to ever be introduced to the world of baking! It works amazingly and my cake came out soft and moist. I'm very proud of this cake and I will DEFINITELY bake this cake again! By the way, I used aluminum cake pans and they work wonders. For some reason, when I tried my first 2 attempts of making a cake, I used regular cake pans and the cakes came out bad and hard :( . But, this recipe is the best I've ever seen and I'm never letting it go!
2. As my early Birthday gift, my mom is letting me take Ballet Classes! I've been wanting to do them for a while know and I had my first class on Wednesday. I absolutely love them!! I really want to level up and get on En Pointe, but that seems so far away! Anyways, I still can't believe that my birthday is so close. February 4th is in almost a week! Haha the only thing that I don't like is that my Birthday is so close to the Superbowl. At least its the day after, not before. I remember when I was 8 years old my Birthday was on the Superbowl. I'm not a very big fan of football, but I like watching the commercials. And I LOVE watching the annual Puppy Bowl! The puppies are sooooo adorable!
3. My dad is coming all the way from Florida to celebrate the weekend of my Birthday with me. He's a HUGE football fan and so I'm probably going to be watching the Superbowl on Sunday. So, I though of baking something cute that would fit the theme of the Superbowl. I was thinking of making Chocolate whoopie pies and make them look like footballs. So, you might be seeing a new recipe next week.....
Yield: One 3-layer Vanilla cake
3, 8 in. aluminum cake pans
1 cup of butter
1 cup of milk (I used 1% milk)
2 cups of granulated sugar
1-2 tablespoons of vanilla extract
3 cups of self-rising flour, sifted
1 cup of butter
3-4 tablespoons of vanilla extract
1/2 cup of heavy cream
2 lb. 10x confectioners sugar
|11. Place the cake pans onto a cooling rack. Let them cool for about 7 minutes .|
|12. Take the cake out of the pans and quickly wrap each layer in plastic wrap. Cool the cakes completely on the cooling racks.|
